Does anyone else think coffee taste bitter in a permanent filter?
I wasn’t thinking and I bought a coffee maker that is a cone filter and the cone filters are more expensive. So I thought a permanent filter would be good for the enverionment and save me money. But I think the coffee has more of a bitter taste. Has anyone else had that problem?

There is a wide variety of sources for bitterness in your cup, ranging from overextraction, imbalanced water composition, overgrinding, defective coffee beans, poor roasting. Briefly, if the temperature of the water is too hot for the grinds, you will overextract, pulling the unfavorable organoleptic acids into the cup. Ideally, depending upon the bean and its roast style, you should vary the temperature of the water for an ideal extraction (obviously not easily done in an auto-drip). 196-203 F is a good range: for French press, manual pourover, you can control water tempt — darker beans, lower water temp, lighter roasted beans, higher water temp. Too much iron in your water, chlorine (you should use activated charcoal filter which is at best 80-85% effective), can produce bitterness. Grinding the beans too fine (exposing excessive surface area) will cause overextraction and thus bitterness. Defective beans and defective roasting (aggressive temperature profile) can also cause bitterness. Gold filters (compared to paper), have a larger pore size, and allow the larger more favorable organiloeptics to pass through – paper filters will prevent these favorable molecules from making it to the cup. I prefer gold filters.

Add a little bit of salt to the coffee – that can take away the bitterness.
yes- and it’s messy- I started buying the brown paper (ie recycled paper) filters, & putting them inside the permanent filter . . . tastes better, & not as bad for environment . . .

Actually, yes. In my instance, I believe it is due to the hard water in our area. I think some of the particles from the hard water build up in the filter. Not proven, just my thought.
In my experience, the bitter taste is the results of too fine of a grind or burnt coffee beans as in Charbucks.
Sometimes the bitter flavor can be a results of the water being too hot, but since you are using a coffee maker, (probably NOT a TECHNIVORM) I seriously doubt that this is the case. Most Chinese made coffee makers will be hard pressed to make it to 165 degrees.
I use a SWISS GOLD filter and I have no problems with the taste, especially since I roast my own coffee and avoid the burnt brands.
